KRUMMEL PAP (PUTHU)




Nothing reminds you more of South Africa than traditional Krummel pap, wors and relish.


Serves 4-6 people


INGREDIENTS:


3 cups water

4 cups mielie meal

2 tsp salt


METHOD:


Add the water to a pot and bring it to a boil.


Add the salt to the water.


Turn heat down to low.


Add the mielie meal in a heap in the centre of the pot - the top of the mealie meal will be protruding out of the water, this is fine. Do not give in to the temptation to stir, never!

Cover with a lid and leave untouched for 1 hour.


After 1 hour, open and using a long fork, mix well until fine pieces develop. Replace the lid and close for a further 15 minutes.


After 15 minutes, remove the lid and using a fork, loosen the pap. Repeat this process twice more at 15-minute intervals.


On the fire: Apply the same processes as above using a cast iron pot, removing to a gentle heat once the mielie meal is added.


If the pap sticks to the bottom of the pot, don't stress, this is expected. Avoid the temptation to scrape this off, leave it as it can be easily removed once the pap is all devoured.


Now you are ready to serve and enjoy with perfectly cooked juicy Braai Club wors and relish.
